Baharatlı Dana Carpaccio / Seared Encrusted Carpaccio of Beef


Malum, bu hafta Bayram! Biz de bunu bahane ettik ve bir et yemeği pişirelim dedik. Tarif meşhur şef Jamie Oliver’ın kitabından. En güzel tarafı da, yapımının çok kolay olması!


Malzemeler

1.5 kg dana file – tek parça
1 çay kaşığı kişniş tohumu, taze çekilmiş
1 avuç taze biberiye, ince kıyılmış
Kuru kekik
Tuz ve taze çekilmiş karabiber
Karışık salata

Tüm baharatları temiz bir yüzeye serpin. Ben daha sonra temizlemesi de kolay olacağından fırın tepsisi kullandım. Daha sonra tek yapmanız gereken, etinizi baharatların üzerinde yuvarlamak.


İkinci hamleniz ise tavanızı kızdırmak. İyice kızdığından emin olmadan etinizi koymayın yoksa tüm suyunu bırakır ve taş gibi olur. Etinizi tavaya atın ve tüm yüzeylerini dağlayın. Bu işlemden sonra ateşi kısın ve yavaşça içini pişirin.


  

Eğer az pişmiş sevmeyenlerdenseniz, o zaman daha ince kesilmiş bir parça et almalısınız. (Etinizi kesinlikle dövdürtmeyin!) Pişirme işleminden sonra etinizi kesme tahtasının üzerine alın ve keskin bir bıçakla ince ince dilimleyin. Servis tabağına koyduğunuz yeşilliklerin üzerinde servis edin.

This week is sacrifice holiday for Muslims, or in Turkish “Kurban Bayramı”.

We will not go in detail and explain this tradition but in this holiday Muslims sacrifice a male farm animal to God and give away some of the meat to poor. So, as you can infer, we eat a lot of meat in these weeks!

So we decided to cook a meat dish which may inspire your recipes, which is adopted from the book of famous chef Jamie Oliver. The best part is it is very easy to prepare.
 
Ingredients

1.5 kg fillet of beef – 1 piece
1 tea spoon coriander seeds, smashed
1 handful of fresh rosemary, finely chopped
A light sprinkle of dried oregano
Salt and freshly ground black pepper
Mixed salad

You need to sprinkle all the spices on a clean surface. I sprinkled them on an oven tray; it was also easy to clean afterwards. Then, all you need to do it roll your meat on it, so it collects all the spices on it.

Secondly, you heat a pan; it should sizzle when you drip some water on it. Then leave the meat on the pan. You should cook all sides until they are relatively ready. Then, you should reduce the heat and start slow cooking, to cook the inside.

If you do not favor rare meat, you should buy a thinner piece so the inside will cook better. After you cook it, remove from heat and place it on a cutting board. Slice it as thin as possible. (Here you need a real sharp and big knife) Place the slices on the salad and ground some more black pepper on it.

Quick China – Far East so Close!

Biz yazıya bir itirafla başlamak istiyoruz. Fark ettik ki bugüne kadar gidip, fotoğraflayıp ancak sizinle paylaşmadığımız tam 10 yer var. Bunların içinden Quick China’yı seçmemizin sebebi ise fotoğraflarda gördüğünüz gibi gittiğimizde hala yaz olması, tam rezalet! Tabi buradan Quick China’nın dört mevsim gidilebilecek bir yer olmadığını çıkartmayın. Tek amacımız dışarıda kar yağarken Quick China’yı okumak zorunda bırakmamak sizi. 


Sipariş ettiğimiz ilk başlangıç, üzerine kaya tuzu serpilmiş, haşlanmış taze soya fasulyeleri. Bunları Obstinate King’in deyimiyle ‘kayış gibi’ diye nitelendirip yanılmak istemiyorsanız, bezelye gibi ayıklayıp çekirdek gibi içini yemelisiniz. Drama Queen ise soya fasulyelerine karşılaştırmalı bir yorum yaparak “Wagamama’dakiler çok daha güzeldi” dedi. Yine de sağlıklı bir atıştırmalık ya da başlangıç olarak iyi bir seçim.

İkinci başlangıcımız ise Kyoto California Rolls. Çok klasik olan California Roll’dan vazgeçemeyip, biraz da değişiklik olsun dedik ve tersyüz edilmiş (inside-out) California Roll olan Kyota California Roll sipariş ettik. Sushiler, fotoğraflarda da görüldüğü üzere (SushiCo’nun aksine) dolgun ve lezzetliler!!!

 

Gelelim ana yemeklere. Bir önceki gün, 3 saat boyunca Ramen’nin hazırlanışını anlatan bir Uzakdoğu filmi izleyen Drama Queen hala filmin etkisinde olduğu için Ramen sipariş etti. Ramen, geleneksel olarak içine konulan tüm malzemelerin ayrı ayrı pişirilmesi ve konulduğu derin ve geniş tasa özel bir biçimde yerleştirilmesi esasına dayanıyor. Filmde söylenildiğine göre Ramen yapmayı öğrenmek sıkı çalışma ve yıllar süren bir ustalık gerektiriyor. Ramen, yiyen insanları mutlu etmek ve sakinleştirmek gibi bir etkiye de sahip filme göre. Elbette Uzak Doğu filmlerindeki mistik olağan üstülüğün bir yansıması da olabilir bu durum. Quick China’ya dönecek olursak, Drama Queen, ‘tadı güzel ama sanki bir şey eksik’ dedi. Wagamama ile karşılaştırınca da elbette Quick China’yı beğenmedi.  (Wagamama Drama Queen’in favori Uzak Doğu restaurant’ı olmuş anlaşılan!)


Diğer ana yemeğimiz ise volkanik taşta ızgara somon. İsmi her ne kadar iddialı da olsa, fotoğraftan da görülebileceği üzere, aslında oldukça minimal bir yemek. Izgara yapılan taze somon, bir kere ısıtıldıktan sonra uzun süre soğumayan volkanik taşın üzerinde servis ediliyor. Böylece balığınız sıcaklığını hep korumuş oluyor. Sizin de yemek soğumasın diye hızlı yedim gibi bir mazeretiniz kalmıyor :). Gerçi buradaki amacı, balık genelde yavaş yendiğinden, soğumasını engellemek. Her neyse, ortasındaki büyük kılçığı ayırdıktan sonra size oldukça lezzetli löp balıketleri kalıyor. Tek sorun Türk yemek kültürünü edinmiş bireyler olarak, balığı ekmeksiz yemek. İnsan biraz garipsese de sıklıkla yenecek bir yemek olmadığı için fazla problem olarak görmüyorum. Ekmekten geçiş dönemi yaşamak isteyenler yanında bir de beyaz pilav sipariş edebilirler :). Sonuç olarak uzun uzun yiyebileceğiniz, rahatlıkla tavsiye edebileceğim bir yemek, mümkünse bir kadeh beyaz şarap eşliğinde.


Finalde ise buz üzerinde meyveler ve ballı ceviz arasında çetin bir savaş oldu ve Drama Queen meyve sipariş edip, yeşil çayının yanına da biraz ballı ceviz konulmasını rica ederek orta yolu buldu. İçinde tropik meyvelerin de olduğu ve ikimizin de evde şımartılış şeklimize uygun olarak soyulup güzelce dilimlenmiş olan meyve kutusu bizden tam not oldu. Fotoğraflar aldatmasın, o kutunun tamamı değil sadece görünen kısmı meyve, biz de bu konuda biraz mutsuz oldu elbette. Ballı cevizler ise tek başına çok ağır ancak çayın yanında bir iki tane yemek için keyifli.


Yurtdışına çıktıysanız bilirsiniz, genellikle Çin restoranları yurtdışında geleneksel olarak döşenmiş salaş ve ucuz mekânlardır. Ankara’daki Quick China şubelerinde ise sanki ağır bir davete gidermiş gibi süslenmiş insanlar görürsünüz. Fiyatları da, öğle menüleri hariç, pahalı buluyoruz. 2 başlangıç, 2 ana yemek ve tatlıdan oluşan bu full course yemek yaklaşık 120 TL gibi bir rakama denk geliyor ki bunlara içecekler dâhil değil. Yine de başarılı bir alternatifi bulunmadığından her daim dolu bu Quick China. Bize de büyüklerimizin sözünü dinlemek kalıyor, kalite istiyorsanız paraya kıyacaksınız.



We would like to start this post with a confession. Today, we realized that there were 10 places that we have visited, photographed but haven’t posted anything about. The reason why we picked Quick China among them is because it summer when we were there! This doesn’t mean that Quick china is a nice place for 4 seasons. The only aim is not to make you read about it at a snowy day.

The fist starter we have ordered is boiled soy with stone salt. If you don’t want to be fooled about their taste like Obstinate King, you need to peel them first. Drama Queen’s comment about them was ‘Wagamama makes them better’. However, if you are seeking for a healthy snack or a starter boiled soy is a good choice.

Our second starter was Kyoto California Rolls. Instead of our true classic California Rolls (every time we go through the whole sushi menu and magically order California Rolls again) we ordered Kyoto California Rolls, which is an inside-out version of California Rolls. Sushi was good tasting (unlike SushiCo).

Drama Queen, who was under the influence of the film she watched for 3 hours the day before, ordered Ramen. Ingredients of Ramen is traditionally cooked in separate pots and organized carefully in to the deep and large bowl it is served in. As it is told in the movie, it is a long and hard path to learn cooking Ramen. In the film it is also claimed that Ramen calms and gives happiness to the people having it. Of course this is also because of the exaggerated mysticism of the Japanese movies. If return to Quick China, Drama Queen commented ‘it tastes good, but something is missing’. She also compared it with Wagamama and of course Chick China failed. (She favors Wagamama very much for sure!)
Our second main dish was grilled salmon on volcanic stone. Although the name is pretentious, meal was not. It’s a basic fresh salmon, first grilled then served on a volcanic stone in order to prevent fish from cooling. The fish was easy to eat (only one fish bone) and delicious with very low fat density (it’s a big problem with me & salmon’s, fat bastards!). Only problem was we, the Turks, are used to eat fish with bread and it’s quite obvious that you cannot find any bread in a Chinese restaurant! (If you try too hard, they can give some rice and that’s all) So it was an interesting experience for me to eat fish without bread. As you can see, I’ve survived and I can recommend this dish preferably accompanied by a glass of white wine.

The final fight was tough between fruits served on ice and honey coated walnuts. Drama Queen solved the dilemma by ordering the fruit asking for complementary walnuts to be served with green tea. The fruit box, which also includes some exotic ones, got full points from us. But don’t be fooled by the photos as the box is not completely filled with fruit. Honey coated walnuts were nice but too heavy on their own as a dessert.

Generally Chinese restaurants are cheap all around the world except Turkey. In Ankara, at the Quick China chains, it makes you feel as if you are attending a special event. Everyone is very well dressed, and as they were the cover girls of the last months’ Cosmopolitan. We also find it expensive, excluding lunch menus, as we have paid a full course dinner for 2 about 120 Liras excluding the drinks. However, as there is almost no competition, it is very hard to find a place if you have no reservations.

Nüve Park

Bir cumartesi öğleden sonrası, “Havalar da bu ara fena gitmiyor, yarın sabah kahvaltıya bir yerlere mi gitsek?” sorusuyla başladı herşey. Validenin arkadaşları gitmiş buraya beğenmişler, internette bir kaç bloga baktım, beğenmişler. Bende iyi o zaman dedim, bir pazar sabahı bir ton yol gittik ve rezil olduk!

Bu sefer soru cevap yapayım dedim:

Çok hoş bir yermiş, bağ bahçe, ne keyifle kahvaltı yapmışsınızdır…

Arabadan indiğimiz andan itibaren Masaya varana kadar şok üstüne şok yaşadık. Girişte sandalyede oturmuş takım elbiseli şapkalı bi amca var, ama heykel. Uçuşak leylekler var, yavru zürafa, fil, eşşek var, ama heykel. Garip bir şekilde ürkütücüler. Chuky’nin arkadaşları sanki… İçeride ise yaldızlar, Roma kolonları, Arap sarayından bozma bir dekorasyon.



Hayvanat bahçesi konsepti varmış. Çoçuklu arkadaşlar çok övdü, nasıl?

Maymun ve papağan çok sevimli. Diğer zavallılar kafeslerde. Sadece tüyleri yolunmuş 2 tavuskuşu ve yavruları ortada dolanıyor. Zaten kafeslerinin önündeki bahçe kazılmış olduğundan hayvanlar istesede çıkabilecek durumda değiller, dolayısıyla çocuklar da onları görebilecek durumda değiller. Ancak çocuğuma yamur çizmesi giydiririm çamura batmadan gider derseniz, o zaman lafım yok.


Büfe nasıldı? Malum brunch, zengindir heralde…

Kahvaltılıklar az ve orta kalitede, çok zeytinyağlı yemek, kızartma ve tatlı var. Ancak bunlardan bir tabak yaparsanız, hepsinin tadına bakıp, yemeden bırakırsınız ve yenmemiş tepeleme bir yemek tabağına ulaşırsınız.


Fiyat ne kadar, neler dahil?

22 TL, büfe, çay, su ve Türk kahvesi dahil. Çay bulanık, sebebi de termos içinde getirmeleriymiş. Böyle birşey hiç duymadım ve validem 5 kere çayı yolladıktan sonra gelen termostaki çay nedense bulanık olmamayı başarmıştı. Bu arada bence kahveyi de evde içmek isteyebilirsiniz.


O zaman, dahil olmayan neler var?

Sahanda yumurta (sucuklusu, sucuksuzu her hali), portakal suyu (taze), gözleme. Yukarıda sözü geçen valide, “ Ay yok artık! Kahvaltıda yumurtanın dahil olmadığı nerede görülmüş!“ şeklinde çıkışınca, çaresiz garson “efendim dahil ederiz“ dedi. Demek ki olabiliyormuş. Portakal suyu da 6 TL imiş.



Bu ziyaretin ardından, anladım ki böyle bir yere gitmek isterseniz mekan kesinlikle Çıtır Simit. 25 TL’ye en kaliteli ürünler, gözlemeler, yumurtalar, portakal suları, herşey sınırsız, öyle 1 bardak portakal suyu falan durumu da yok. Özetle gitmeyin, yazık yaktığınız benzine!

A saturday afternoon, grandma said “The weather is nice nowadays, why don’t we go to brunch tomorrow?” and she pushed the button for a desperate sunday brunch. Mom’s friends went there before and they said the place was nice, I googled and read about it at a few blogs, they said it was nice, than I said, “lets discover something” and we decided to go. Who would know I was driving a long long way for nothing!

This time I decided to do question and answer:

We heard it was a very nice place; you must have enjoyed it at the nice garden…

I was shocked when I was standing at the entrance. There was a guy sitting at a chair with his suit, tie and hat, however he was a statue. There were flying storks, a baby giraffe, an elephant, a donkey, but all sculptures. They were strange and spooky, as if they were Chuky’s friends. Indoor, much more terrible, golden plated everything, Roman columns, Arabic architecture, all mixed. 

They have a zoo concept right? Friends with kinds love the place…

The monkey and the parrot are gorgeous. The other poor animals are at the cages. Only a pair of peacocks and their poor child is around. Actually, even if the animals want to go out, they cannot as the garden in front of their cages are under construction. Naturally, children also cannot go there to see them. However, in order not to get stuck in mud, if you are planning to put the rains boots on and take the child there, I have nothing to say.

How was the buffet?

Very poor both quality and quantity vise. Many dishes and desserts, however if you fill a plate with those, you will only taste them and leave the rest.

How much is it? 

22 TL for the buffet, tea, water and Turkish coffee. Tea is not clear, and you may prefer to cook the coffee at home even if it is your first time!

So, what is not included?

Eggs (with or without sucuk), orange juice, gözleme (you cannot call it Turkish pancake; to start with, it is not sweet). When mom heard the eggs were not included, she said “I have never seen such a thing. How come the eggs cannot be included to a breakfast?”. The waiter said “no worries, we will include it”. Come on, what is this, do we have to negotiate it!

Following this trip (it literally is a trip, as it is far), I concluded that, if you are interested in such attractions, your place should be Çıtır Simit. For 25 Liras you get the best quality limitless and all included. To sum up, do not go.

Dubrovnik by Drama Queen Vol. 3

Gelelim bir yere gidildiğinde hayatınızı mahfedebilecek yada keyfinize keyif katacak konuya. Dubrovnik İtalya’ya yakınlığının yeme – içme kültürüne etkisi aşikar, dondurmadan pizzaya, zeytinyağından şaraba ufak da olsa İtalyan birşeyler bulmak mümkün. Bense, ziyaret etme fırsatı bulduğum birkaç yeri paylaşacağım sizlerle.

SLADOLODERNA DUBROVNIK



Stradun’da ilerlerken, sağda birkaç dükkan sonra dışarı taşan kuyruktan anlarsınız geldiğinizi.



Renk renk kaymak gibi yumuşacık dondurmaların topu 10 Kuna (1.43€). Aç gözlülük yapıp benim gibi üç top istemeyin, çünkü onların bir topu bizim iki top kadar. Burada Türkçe konuşan satıcıların da çalıştığını eklemeliyim.


PIZZERIA BARACUDA



Nikole Bozidarevica Sokak’ta (Harita No: 45) bulunan pizzacı okuduğum çeşitli yorumlara da dayanarak, Dubrovnik’in eniyisi.


Asla tam bir İtalyan pizzası beklemeyin ama keyifli birşeyler yiyeceğiniz kesin.


Bir 50’lik, bir 33’lük bira, su ve biri deniz ürünlü olmak üzere üç pizzaya 254 Kuna (36.29€) ödedik. Dar bir sokak arasında kendinizi yerel zannederek birşeyler atıştırmak isterseniz, Pizzeria Baracuda doğru yer.


SPAGHETTERIA TONI




Nikole Bozidarevica Sokak’taki Pizzeria Baracudaya gelmeden adı üzerinde, makarnacı, nispeten daha az turistik.



Akıllara durgunluk veren lazanyalarını, biz sebzeli yedik, ve arasından seçmesi zor makarnalarını kesinlikle tadın; ancak çorbalara bulaşmayın.



Özellikle balık çorbası korkuç, anneannemin “bu ne böyle bulaşık suyu gibi” dediğini eklemek istiyorum bu noktada.



2 balık çorbası, 1 domates çorbası, somon ve karidesli tam buğday makarnası ve sebzeli makarna için 221 Kuna (31.57€) ödedik. Rahat bir öğle yemeği için iyi seçim olabilir.
BUZA Adriyatik’te güneş nasıl batar henüz izlemediyseniz, Buza size bu keyfi yaşatır. Gün batımına karşı buz gibi bir bira (35 Kuna ≈ 5€) yudumlamak için Buza’ya gitmeye karar verecek olursanız, siz siz olun, erken gidin. O manzarayla popüler olmaması garip olurdu zaten. (Harita No: 50)

LOKANDA PESKARIJA



Burası benim için tek başına Dubrovnik’e gitme sebebi olabilir. Limana bakan masanızda otururken garsonlar yanınızdan vızır vızır geçer, yan masaların yemeklerini taşır ve siz de biraz sonra gelecek siparişlerinizden birini görmeye çalışarak taşıdıkları tencereleri gözetlersiniz.



Tencere derken, şaka yapmıyorum. Burası tam bir balıkçı lokantası. Siparişler kocaman porsiyonlar halinde ve tencerelerde geliyor. Sanırım en sevdiğim kısım da burada zor bulunan veson derece pahalı olan deniz kabuklularını orada bolca ve uygun fiyatlı yiyebilmek.



Fotoğraflarda görülen kazanlarca yemeğe (midye, karides, kalamar, deniz ürünlü risotto, salata) ve bir şişe güzel şaraba 505 Kuna (72.14€) ödedik.




Kendimizi aşıp bunları üç kişi yedik ama rahatlıkla 4-5 kişiye yeterdi. Hergün gitmiyoruz değil mi? Bir de menüde “small fish” adıyla bulunan bazı yerlerde “silver fish” diye de bilinen balıkları da çok güzel yapıyorlarmış. Daha sonraki bir postda bunu yediğimiz başka bir yerde bahsedeceğim. RAVELIN CLUB





İşte burası Dubrovnik’in yıldızı. Dev bir ağacın kanatları altındaki teras, şehir duvarları manzaralı. Bana kalırsa şık bir akşam yemeğinin vazgeçilmez ve tek adresi. Bir de komşusu Gill’s var ama orası Reina’nın kokoş ve gereğinden fazla pahalı restaurantlarını hatırlatıyor bana. Dekorasyonu da çok benziyor doğrusu. Özetle bana sorarsanız, şık bir yemek için Ravelin’e gitmek gerek. Fiyatlar ise kesinlikle korkutucu değil. Fileto balık, mürekkep balıklı risotto, midyeli spaghetti, su ve kuver için 356 Kuna (50.86€) ödedik. Kuver denilen şeyin balıklı üç iştah açının şık bir sunumu olduğunu düşündüğümüzde, kuver ücreti alınması oldukça normal. (Harita No:47)



KARAKA IRISH BAR


Burası Obstinate King’in tavsiyesi. Bir İrlanda Pub’ı. Klasik bir Pub’dan farksız, bol bira çeşidi var. Fakat buranın Obstinate King için çok özel olmasının tek sebebi var, Guiness... İsli, yoğun ve doyurucu tadı düşünüldüğünde hak vermemek mümkünn değil. İlgilenenlere duyurulur. (Harita No:53)

Genel ve son not olarak her yerde %10 bahşiş beklentisi olduğunu eklemek isterim. Bu elbette minimum.

It is time to talk about the topic that can either cause nightmares or please you the most. It is not very difficult to see the Italian influence on their cuisine such as the use of olive oil, pizzas, the magnificent ice cream of heirs and of course the wine. This time I will be talking about the very few places that I had a chance to visit.


SLADOLODERNA DUBROVNIK


While walking along the Stradun, after passing a few shops, you will see a crowd in front a shop, so you understant you are there. The ice cream parlor selling all colors of soft and delicious ice cream for 10 Kuna (1.43€). Don’t be greedy and ask for a couple of scoops, as their standard scoop is quite big.


PIZZERIA BARACUDA


Regarding my reasearch on eats of Dubrovnik, Pizzeria Baracuda on Nikole Bozidarevica Street (Map no. 45) is the best pizzeria. Never expect the perfect Italian pizza but it is for sure that you will enjoy what are about to have. For 2 beers and 3 pizzas, one with sea food, we paid 254 Kuna (36.29€).If you are willing to pretend like a local and enjoy some Italian like food at a narrow, cosy street, Pizzeria Baracuda is the right choice.


SPAGHETTERIA TONI


It is the pasta place at Nikole Bozidarevica Street just before Pizzeria Baracuda, relatively less touristic. You should definetely try the mouthwatering lasagna (we tried the vegetable one) and pastas that are hard to choose from. However, do not mess with the soup, as they are awfull. We paid 221 Kuna (31.57€) for 2 fish soup, 1 tomato soup, 1 pasta with salmon & shrimp and a vegetable lasagna.


BUZA


If have no idea about the sunset at Adriatic coast, Buza is tha place! You can enjoy a cold bottle of beer (35 Kuna ≈ 5€) while watching the sunset. The important point here is not to forget arriving early. You will see why it is so crowded when you get there.


LOKANDA PESKARIJA


This place can be my one and only reason to go back to Dubrovnik. While you are enjoy the view of the old harbor, waiters pass by you, almost running, and carry the orders of the other tables, and you cannot overcome your excitement and start looking at the pots of the next table.


When I say ‘pot’ I am actually meaning it. The portions are quite huge (at least for Europe) and they serve them in the pots they were cooked. I think this is what I like most at the place. The prices are quite reasonable. All the pots you see at the photos (mussels, praewns, calamaris, sea food risotto, salad) and a nice bottle of wine costed us 505 Kuna (72.14€). We have ordered this for 3 but it was enough for 4-5 people. In addition, friends told us ‘small fish’ named dish on the menu, sometimes it is also called ‘silver fish’ was also very good. I will talk about it later, at a different place. (Map no. 43)


RAVELIN CLUB


This is literaly the star of Dubrovnik. Under a huge three, lies the great terrace. If you ask me it is the only place if you are looking for a decent dinner. There is also the neighbour Gill’s, however I didn’t really like the place as it is unnaturally fancy. The prices are not affordable but not very reasonable. For fillet fish, ink fish risotto, pasta with mussels and a bottle of water we paid 356 Kuna (50.86€). The also bring a couvert plate, and charge for it, however, they are worth trying. (Map no.47)

This place is suggested by Obstinate King. A classic Irish Pub, many kinds of beer are available. However, what drags Obstinate King to the place is “Guinness”. If interested, it is marked by number 53 at the map.
